the restoration of ancient ceilings
The very ancient ceilings, already of significant historical value, require constant care to maintain their splendor. The frescoes were created with full respect for the palace’s architecture and using ecological materials. The renovation work on the very ancient ceilings lasted almost 15 years, completed in 2019 with the “Paradiso dei Ciucci,” located in the restaurant’s kitchen.

In addition to the careful selection of raw materials, which has always characterized every single dish at La Caravella restaurant, in recent years the environments have also been adapted to keep up with the times.
The heat, humidity, and smog that plague the external structures have become unsustainable and can lead to health problems.
For this reason, we have created eco-sustainable environments with ideal temperatures, both in summer and winter. We have intervened in the dining and kitchen areas, restoring and insulating the historic internal and external walls, damaged by sea salt and time, with lime-based mortars and paints. Additionally, to maintain the environments at an ideal temperature, we have installed new air conditioning, with air exchange and new LED lighting. With these interventions, we have made our premises “green,” ensuring safer environments.
