The Legend…The Sun on the plate

Mamma Anna’s specialty is the historic dish of the Caravella; the Amalfi Lemon Soufflé.
In 1959, my Mamma, struggling with the opening of the Restaurant, made a mistake with the first preparation. She made the soufflé forgetting to add the flour as per the classic recipe.
From the mistake the success came, today it is one of the masterpiece desserts of Italian Cuisine. It is dedicated to Salvatore Quasimodo, Nobel Prize for Literature in 1959. He was a friend of my Father, his face lit up for that “cloud”, as he described it with a beautiful and effective poetic image, and he advised him several times, without success, to call it the “Sun in the dish”. Today, we are among a very few Restaurants in the world to have the privilege of serving you a dish labeled by a Nobel Prize winner.
